Made myself a steak-umm*/swiss cheese/english muffin sandwich this afternoon.  It was tasty enough, but missing something.  Mayo is definitely out – for me, mayo and hot sandwiches just don’t go together.  Spicy mustard?  Red pepper relish?

Regardless of what’s missing, it was another “I love my Foreman Grill” sandwich.  Steak-umms take about a minute and a half, and there is no grease splatter like when you try to do it in a pan.  Once you get the steak & cheese in the muffin, throw it back on the grill and go all panini on it.  Fast, and such easy cleanup.

I’ll report back when I figure out the missing piece.

*I love them.  So sue me.

My very favorite way to have this chicken salad is on criossants, but I couldn’t get hold of any today, but little flour tortillas did the trick. It’s ridculously easy.

Toss some boneless, skinless chicken breasts into a deep skillet, cover w/water, put on med to high heat. Bring to a boil (~10 mins), cover, cook 10 minutes, turn over, cover, cook 10 more minutes.

Put chicken in fridge to chill (just makes it easier to cut up. If you prefer shredded, then go at it)

Dice chicken, slather in sauce, chill, eat. It’s carb friendly to boot.

Sauce:
~2 parts mayonnaise
~1 part Country Dijon Mustard (the kind w/the seeds)

Mix to taste, mix with chicken until it looks like you’ve put a little too much on it – as the chicken sits, it will soak up some of the sauce.

Things you can add that are good:
- chopped celery
- chopped walnuts
- chopped apples
- finely diced onion

Since you can’t see the filling when it’s all wrapped up…

I’ve been in the final throes of prepping a townhouse for sale the past few weeks, which has sadly led to very little cooking, and too much junk, fast food and frozen crap. Well, that happily is coming to an end.

Tonight was just a great little sandwich, nothing fancy, but actual real food nonetheless. Pumpernickle bread, a little mayo, a little country dijon mustard, italian roast beef and a glass of milk. Very simple, very good. Only thing that could have made it better was if I could say the bread was homemade, but unfortunately, I can’t.

But still, real food. :) (And the dog certainly enjoyed the 1/4 of it that he managed to snatch away when I wasn’t watching him closely.)

Tomorrow I’ll be heading over to the farmer’s market, time & weather permitting to see what other good things I can pick up.
