National Meatloaf Day!

With National Meatloaf Appreciation Day being just around the corner, tonight I made meatloaf to submit for the occasion. Meatloaf is such a quintisential comfort food, and the weather is just enough on the cool side that it’s perfect for dinner this evening. And it pairs wonderfully with anything potato based.  Mine goes heavy on italian spices and the secret ingredient is the 57 sauce – adds a nice little tang to it. Basically, it’s just tasty.

It’s a bit of a “wing-it” recipe – one I’ve done for years and there isn’t much in the way of measuring that goes on in the process – but I can at least tell you what all goes in it!

1 # 90% lean ground beef
1-2 cloves of very finely diced garlic
~1/2 c. finely diced onion
Couple shakes of basil, oregano and thyme
Small handful of chives
1 egg
splash of milk
couple shakes of 57 sauce (about 1/3 of a cup)
enough breadcrumbs to get it all to the right consistency (I use “Italian Style” but regular should be fine, too.)

Mix everything together, adding the breadcrumbs last – you need it at a consistency where you can form it into a big ol’ ball without it falling apart. Also, I’ve found that having toss-away latex gloves to wear while mixing is really nice as you don’t end up with ground beef under your nails…

Bake @ 400 degrees for 1 hour on a broiler/roasting pan so the excess fat can just drain off while it’s cooking – no loaf pans! I let it rest for about 5 minutes before trying to slice.

I glaze the outside w/more of the 57 sauce and usually reglaze one or two more times while it’s cooking. It’s great hot, and awesome cold the next day in a sandwich. :-D

Swedish Meatball redux

So, a couple months back I made Swedish Meatballs and while they were pretty good, they weren’t quite there.

Tonight I took another swing at them – changed the veggie stock to chicken stock, and heavy cream for the milk.  Damn near perfect. :-D

Market to Market…

So, I was out and about today and decided to check out the new Bloom grocery store. Food Lion has replaced just about all their NoVa stores with the new Bloom brand and have been marketing it pretty heavily. I was curious to see if it was actually different or not.

The Food Lion’s up here were OK, but not great. (As opposed to the ones down in OBX, which are very nice – odd.) Bloom’s are basically the same thing with new graphics and a few small, new departments – more organic, some more prepared foods, but really nothing exciting at all.

The oddest thing is that in my experience, people tend to shop from the right hand of the store to the left hand side. And yet, Bloom has all the frozen foods on the far right hand aisle. Doesn’t make sense to me.

So, Wegman’s is still far and away the best market in the area. Even though it’s 20 minutes away, it’s worth it. And that is where I did my shopping today so we can either have meatloaf or Swedish Meatballs for dinner tomorrow evening.

Chicken Enchilada Crisps

So, the folks over at Chefs Like Me threw out a chicken challenge this week – here are the results:

I’ve been in the mood for something Tex-Mex-ish lately, and this popped into my head when I saw the challenge was chicken.

Not a difficult dish at all, but hit the spot tonight. Poached chicken breasts in 1:2 water/broth, shredded them and let them marinate in enchilada sauce overnight. Fried up the tortillas, put down some cheddar & monterey jack cheese, then the chicken and more cheese. Pop under the broiler just long enough to get the cheese melty. When I make these again, I need to figure out something else to put on top to give it a little more kick and color.

Has anyone at all out there been successful in registering for the C2C forums? I’ve been trying to register for 3 weeks now, and obviously have not had any luck, otherwise I wouldn’t be making this post.

I register, I get the email saying my username has been reserved and that my membership is pending approval. From looking at a thread earlier in the year, it seems the “you’re in” email should be within a day… If I attempt to login, I either get a message saying the membership is still pending approval, or then a flat out “username/password” not found.

I’ve tried using the contact forms to get assistance and gotten absolutely no response. Honestly, it seems that the registrations and the contact forms are simply going off into the ether.

Looking at this thread, it would seem it was happening earlier this year as well, and I’d love to PM the admin and tell him I need assistance, but of course, I can’t do that without logging in, and I can’t log in because my registration won’t stick.

If they just don’t want me, at least they could email me and tell me so! ;) Yes, I know I’m not a professional, but there are other non-pros out there trying to decide where they want to take things and how to go about it, and it would be nice to be able to post the occasional question regarding culinary education and such.

If someone else out there has been able to register and could help me get in contact with the Admin so I can find out what’s gone awry, I’d certainly appreciate it.
